Ingredients:

  • 1 1/2 lb ground meat
  • 3/4 cup chopped onion
  • 1 clove garlic, crushed
  • 16oz tomatoes
  • 6oz tomato paste
  • 2 tsp basil
  • 1 tsp oregano
  • 2 tsp salt
  • 8oz lasagna noodles
  • 3 cups lowfat cottage cheese (small curd)
  • 1 tbs parsley
  • 2 eggs beaten
  • 3/4lb skim mozzarella grated
  • 1/2 cup parmesan cheese

Directions:

Brown meat, onion, garlic.  Drain.  Add tomatoes, paste, basil, oregano, salt.  Simmer uncovered for 30 minutes.  Cook noodles as directed.  Mix cottage cheese, parsley, eggs.  Layer in a 9 x 13 pan, layering noodles, cheese, and meat.  Bake for 45 minutes at 350 degrees.  Cool 10 minutes.
