Ingredients:

  • 1 large carrot
  • 1 small head of cabbage (about 1 to 1.5 lbs)
  • 2 tsp kosher salt
  • 1/2 cup mayonnaise
  • 2 tbs rice vinegar
  • 2 tbs mustard
Steps:
  • Grate the carrot into a large mixing bowl
  • Grate some of the cabbage and then slice the rest, for whatever consistency you prefer, and add to the carrot
  • Add remaining ingredients
  • Mix

Ingredients:

  • 1 1/2 lb ground meat
  • 3/4 cup chopped onion
  • 1 clove garlic, crushed
  • 16oz tomatoes
  • 6oz tomato paste
  • 2 tsp basil
  • 1 tsp oregano
  • 2 tsp salt
  • 8oz lasagna noodles
  • 3 cups lowfat cottage cheese (small curd)
  • 1 tbs parsley
  • 2 eggs beaten
  • 3/4lb skim mozzarella grated
  • 1/2 cup parmesan cheese

Directions:

Brown meat, onion, garlic.  Drain.  Add tomatoes, paste, basil, oregano, salt.  Simmer uncovered for 30 minutes.  Cook noodles as directed.  Mix cottage cheese, parsley, eggs.  Layer in a 9 x 13 pan, layering noodles, cheese, and meat.  Bake for 45 minutes at 350 degrees.  Cool 10 minutes.

Alton Brown’s Granola

The flavor of this granola is great, but its missing the large chewy clumps that I like.  I’d like to add some honey next time, but it’s already sweet enough.
